"Not Your Grandma's!" Gourmet Apple Butter - 1 Pint

Apple butter, rich and delicious, with a good kick of citrus and a hint of grand marnier. 

Type & Consistency: Butters- smooth and spreadable

Ingredients: Apples from local orchard, oranges, spices, grand marnier, freshly squeezed lemon juice

Process Notes: Apples freshly picked from local orchard, slow cooked, hand-pressed. The citrus bite has an edge to it with the marnier. So many apple butters are extremely close and very basic. I could not find many other renditions, so I thought I'd do something different for variety.

Organic Homestyle Spiced Applesauce and Baked Apple Dessert – ½ Pint

Fantastic blend that I've made many times, loved and adored by many. Fresh apple flavor is enhanced by the fact that it is not overprocessed into mush, but instead has chunks of apples to provide a multi-layer of flavor where the fresh apple flavor mingles with the slow-cooked apple flavor and the spices. Fantastic cold or heated, as dessert alone or on cakes or pies, as an ice cream topping, or serve as a side dish at dinner. Like the jams and preserves, this can also be added to desserts and baked good recipes for apple cakes, cookies, pies, and pastry fillings.

Type & Consistency: Chunky texture. Think less of "sauce" and more of "slow baked apples"

Ingredients: Freshly picked apples from local orchard, organic brown sugar, unsulphured molasses, spices, fresh lemon juice. 

Process Notes: One of the largest variety of spices used in my recipes.

"Mulled Cider" Fresh Orchard Apple Cider Jam -  ½ Pint

Warm, mulled apple cider in a jar. Seriously. This jam was made from the best cider I've ever tasted. During the Autumn, I make a few trips to the orchard to stock up. It's intoxicatingly delicious, and this jam is definitely one of the sweetest.

Type & Consistency: Smooth, but with a bit of texture, like cider. 

Ingredients: Unpasturized apple cider from local orchard, light brown sugar, lots of fresh spices, a bit of pectin, fresh orange juice and zest. 

Process Notes: Cider becomes pasteurized during canning process. All spices are in whole form, freshly ground down for cooking.

Organic Gourmet Blueberry Preserves, Pie Filling & Dessert Topping – ½ pint

Pure, fresh blueberries, with a few extra dimensions and depth.

Type & Consistency: Chunky, whole blueberries in liquid. For pie, thicken up with cornstarch slurry if desirable. 

Ingredients: Freshly picked blueberries from backyard, organic blueberry maple syrup, sugar, blueberry liquor (made from port), fresh lemon juice.

Process Notes: Blueberries macerated in syrup and slowly brought to boil. No gelling agents.

Fresh Organic Garden SUPER HOT Salsa - 1 Pint

Very fresh, chunky chopped assorted peppers, tomatoes, onions, garlic with cilantro. As if you just made it yourself. A step up from the HOT salsa. 

Type & Consistency: Chunky and hearty.

Ingredients: Tomatoes (blanched and skin removed - heirloom, roma, cherry, beefsteak), white onion, sweet peppers, green pepper, various hot peppers (incl. jalapeño, banana/anaheim, hot chilies, habanero, mirasol, thai and cherry peppers - very hot peppers used in careful amounts since they pack such a punch), garlic, fresh lime juice, fresh organic cilantro, white wine vinegar and pinch of organic brown sugar. 

Process Notes: This is BEYOND INSANELY HOT salsa, at least to me. Almost all ingredients came from my garden. The garlic came from a neighbor. This is not super thick as I did not use cornstarch or any other thickeners. All pure natural goodness. Don't say you weren't warned. :) Not for the weak.

“Gourmet Homemade is a labor of love. Since I have become disabled, I try very hard to keep myself occupied in other ways when I can. The one project I maintained last summer was an organic garden. I wanted to preserve all the fruits and veggies and good things from not only my garden, but the local farmers and neighbors (small community) and family to have in the winter, when grocer's produce can be bland and chemically enhanced. So, I began canning. And continued, and it grew into another project as the summer came and went. All of these recipes were well thought out, with the best ingredients I could attain, mostly organic, gourmet quality, and from the healthiest fruits. In addition, each jam, jelly, marmalade and preserve took at least one day to make, many took two days of work or more between harvesting, washing, cleaning and prepping, simmering, developing and working with the flavors, and then the sterilization, the canning process, drying, labeling and listing and describing. I have no idea if I'll make any profit from this, but I enjoyed the process, and hope others can enjoy them as well. If you've never made jams or jellies or canned before, it's a huge effort with massive amounts of time and energy, so these truly are, as I said, a labor of love. Enjoy.”

Notes on Gourmet Homemade’s canning process:

“All canned items are processed in a pressure cooker or boiling water bath for 45 min-1 hour to assure safety, more than the FDA requirements. All jars and lids are brand new and were sterilized immediately before usage.

Please note: All Jams, Jellies, Preserves, salsas and sauces are made from fruits or vegetables from my backyard or local farmers to get the best flavors and the least amount (if any!) chemicals or preservatives in super hygienic conditions (I'm a stickler for that!). All recipes are of my own creation (except for the simple ones) and I use only the minimal amount of gelatin add-in needed, so items may not be super thick, but more natural. All sets are made in small batches, so there is very limited availability.”
